Healthy Recipe: Shrimp and avocado salad with mixed greens

 Ingredients:

  • 1 pound (450 grams) shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 cups mixed salad greens
  • 2 ripe avocados, peeled, pitted, and diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup sliced almonds (optional)

For the dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the shrimp, olive oil, paprika, salt, and pepper. Toss well to coat the shrimp evenly. Let it marinate for about 15 minutes.
  2. Heat a grill pan or skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until they turn pink and opaque. Remove from heat and set aside.
  3. In a small bowl, whisk together the dressing ingredients: olive oil, lime juice, minced garlic, Dijon mustard, salt, and pepper. Set aside.
  4. In a large salad bowl, combine the mixed salad greens, diced avocados, cherry tomatoes, red onion, and cilantro leaves. Toss gently to combine.
  5. Add the cooked shrimp to the salad bowl. Drizzle the dressing over the salad and toss everything together until well coated.
  6. If desired, sprinkle sliced almonds over the top of the salad for added crunch and texture.
  7. Serve immediately and enjoy!
