Minestrone soup with whole grain bread


 Ingredients:

For the Minestrone Soup:

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup small pasta (such as macaroni or ditalini)
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 2 cups fresh spinach, chopped
  • Grated Parmesan cheese (optional, for serving)

For the Whole Grain Bread:

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt
  • 1 1/2 cups warm water
  • 1 tablespoon olive oil

Instructions:

  1. For the Minestrone Soup:
    • Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 5 minutes.
    • Add the diced carrots, celery, zucchini, and green beans to the pot. Cook for another 5 minutes, stirring occasionally.
    • Pour in the diced tomatoes and vegetable broth. Add the dried oregano, dried basil, bay leaf, salt, and pepper. Stir to combine.
    • Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes to allow the flavors to meld together.
    • Add the small pasta and kidney beans to the pot. Cook for an additional 10 minutes or until the pasta is al dente.
    • Stir in the chopped spinach and cook for a few minutes until wilted. Taste the soup and adjust the seasoning if needed.
    • Remove the bay leaf before serving. Ladle the hot Minestrone soup into bowls and garnish with grated Parmesan cheese, if desired.
  2. For the Whole Grain Bread:
    • In a large mixing bowl, combine the whole wheat flour, all-purpose flour, yeast, and salt. Mix well.
    • Gradually add warm water to the dry ingredients while stirring with a wooden spoon or your hands. Continue mixing until a sticky dough forms.
    • Drizzle olive oil over the dough and knead it in the bowl for about 5 minutes until it becomes smooth and elastic.
    • Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm place for about 1 hour or until it doubles in size.
    • Preheat the oven to 425°F (220°C). Place a baking stone or sheet pan in the oven while it preheats.
    • Punch down the risen dough to release any air bubbles. Transfer it to a floured surface and shape it into a loaf or desired bread shape.
    • Carefully place the shaped bread on the preheated baking stone or sheet pan. Bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
    • Remove the bread from the oven and let it cool on a wire rack before slicing.

Serve a warm bowl of Minestrone soup alongside freshly baked whole grain bread. Enjoy!
