For the Minestrone Soup:

For the Whole Grain Bread:
- 2 cups
whole wheat flour
- 1 cup
all-purpose flour
- 1
teaspoon active dry yeast
- 1
teaspoon salt

cups warm water

Instructions:
- For
the Minestrone Soup:
- Heat
olive oil in a large pot or Dutch oven over medium heat. Add the chopped
onion and minced garlic. Sauté until the onion becomes translucent and
fragrant, about 5 minutes.
- Add
the diced carrots, celery, zucchini, and green beans to the pot. Cook for
another 5 minutes, stirring occasionally.
- Pour
in the diced tomatoes and vegetable broth. Add the dried oregano, dried
basil, bay leaf, salt, and pepper. Stir to combine.
- Bring
the soup to a boil, then reduce the heat to low. Cover and simmer for
about 15 minutes to allow the flavors to meld together.
- Add
the small pasta and kidney beans to the pot. Cook for an additional 10
minutes or until the pasta is al dente.
- Stir
in the chopped spinach and cook for a few minutes until wilted. Taste the
soup and adjust the seasoning if needed.
- Remove
the bay leaf before serving. Ladle the hot Minestrone soup into bowls and
garnish with grated Parmesan cheese, if desired.
- For
the Whole Grain Bread:
- In a
large mixing bowl, combine the whole wheat flour, all-purpose flour,
yeast, and salt. Mix well.
- Gradually
add warm water to the dry ingredients while stirring with a wooden spoon
or your hands. Continue mixing until a sticky dough forms.
- Drizzle
olive oil over the dough and knead it in the bowl for about 5 minutes
until it becomes smooth and elastic.
- Cover
the bowl with a clean kitchen towel or plastic wrap and let the dough
rise in a warm place for about 1 hour or until it doubles in size.
- Preheat
the oven to 425°F (220°C). Place a baking stone or sheet pan in the oven
while it preheats.
- Punch
down the risen dough to release any air bubbles. Transfer it to a floured
surface and shape it into a loaf or desired bread shape.
- Carefully
place the shaped bread on the preheated baking stone or sheet pan. Bake
for 25-30 minutes or until the bread is golden brown and sounds hollow
when tapped on the bottom.
- Remove
the bread from the oven and let it cool on a wire rack before slicing.
Serve a warm bowl of Minestrone soup alongside freshly baked
whole grain bread. Enjoy!
