Ingredients:
For the meatloaf:

Instructions:
- Preheat
the oven to 375°F (190°C). Line a baking sheet with parchment paper and
set aside.
- In a
large mixing bowl, combine ground turkey, diced onion, minced garlic,
grated zucchini, grated carrots, breadcrumbs, ketchup, Worcestershire
sauce, Dijon mustard, dried thyme, dried oregano, salt, and black pepper.
Mix well to combine.
- Add
the beaten eggs to the turkey mixture and mix until all the ingredients
are evenly incorporated.
- Transfer
the meatloaf mixture to a greased loaf pan, pressing it down firmly to shape
it into a loaf.
- Place
the loaf pan in the preheated oven and bake for 45-50 minutes, or until
the internal temperature reaches 165°F (74°C).
- While
the meatloaf is baking, prepare the roasted sweet potatoes. In a large
bowl, combine the sweet potato cubes, olive oil, paprika, garlic powder,
salt, and black pepper. Toss until the sweet potatoes are evenly coated.
- Spread
the sweet potato cubes in a single layer on the prepared baking sheet.
Roast in the oven for about 25-30 minutes, or until they are golden brown
and tender, flipping them halfway through.
- Once
the meatloaf is cooked through, remove it from the oven and let it rest
for a few minutes before slicing.
- Serve
the Turkey and Vegetable Meatloaf slices alongside the roasted sweet
potatoes. You can garnish with fresh herbs like parsley or thyme, if
desired.
