Instructions:
- Preheat
your grill or grill pan over medium-high heat.
- In a
medium bowl, combine the olive oil, minced garlic, dried oregano, salt,
and black pepper. Add the shrimp to the bowl and toss to coat them evenly
with the marinade. Let them marinate for about 15 minutes.
- While
the shrimp are marinating, prepare the salad. In a large salad bowl,
combine the romaine lettuce, diced cucumber, cherry tomatoes, sliced red
onion, Kalamata olives, and crumbled feta cheese.
- In a
small bowl, whisk together the lemon juice, red wine vinegar, extra-virgin
olive oil, salt, and black pepper to make the dressing. Set aside.
- Once
the grill is hot, grill the shrimp for about 2-3 minutes per side, or
until they are pink and cooked through. Be careful not to overcook them as
they can become rubbery.
- Remove
the shrimp from the grill and let them cool slightly. Once they are cool
enough to handle, cut them into bite-sized pieces.
- Add
the grilled shrimp to the salad bowl and pour the dressing over the top.
Toss everything together gently to combine.
- Sprinkle
the chopped fresh dill over the salad if desired.
- Serve
the Greek salad with grilled shrimp immediately and enjoy!
