Instructions:
- Preheat
your oven to 400°F (200°C).
- Drain
the tofu and pat it dry using paper towels. Cut the tofu into cubes or
slices, depending on your preference.
- In a
bowl, whisk together soy sauce, sesame oil, maple syrup or honey, rice
vinegar, minced garlic, and grated ginger to make a marinade.
- Dip
each tofu piece into the marinade, ensuring they are coated well. Let the
tofu marinate for about 15 minutes.
- While
the tofu is marinating, prepare the stir-fried vegetables. Heat one
tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add
the sliced onion, bell pepper, carrot, broccoli florets, and snap peas to
the skillet. Stir-fry the vegetables for about 5-7 minutes until they are
tender-crisp. Season with salt and pepper to taste. Remove the vegetables
from the skillet and set aside.
- In a
shallow dish, place cornstarch. Dip each tofu piece into the cornstarch,
ensuring they are evenly coated.
- Heat
the remaining tablespoon of vegetable oil in the same skillet or a
separate baking dish that is oven-safe. Place the tofu pieces in a single
layer in the skillet or baking dish.
- Bake
the tofu in the preheated oven for about 20-25 minutes, flipping halfway
through, until it is crispy and golden brown.
- While
the tofu is baking, reheat the stir-fried vegetables over medium heat.
- Serve
the baked tofu over a bed of cooked brown rice, with the stir-fried
vegetables on the side. Garnish with sesame seeds and chopped green
onions, if desired.
