Ingredients:

boneless, skinless chicken breasts

fresh spinach leaves, chopped

Instructions:
- Preheat
your oven to 400°F (200°C).
- Prepare
the chicken breasts by creating a pocket for the stuffing. To do this, lay
a chicken breast flat on a cutting board. Using a sharp knife, make a
horizontal slit along the side of the chicken breast, being careful not to
cut all the way through. Repeat this step for the remaining chicken
breasts.
- In a
bowl, combine the chopped spinach, crumbled feta cheese, minced garlic,
dried oregano, salt, and black pepper. Mix well until all the ingredients
are evenly incorporated.
- Stuff
each chicken breast with the spinach and feta mixture, dividing it equally
among them. Gently press the edges of the chicken together to seal the
stuffing inside.
- Place
the stuffed chicken breasts in a baking dish and set aside.
- In a
separate bowl, toss the trimmed asparagus spears with olive oil, salt, and
pepper until they are well coated.
- Arrange
the asparagus spears around the chicken breasts in the baking dish.
- Place
the baking dish in the preheated oven and roast for about 25-30 minutes or
until the chicken is cooked through and the asparagus is tender. The
cooking time may vary depending on the thickness of the chicken breasts,
so it's a good idea to check for doneness by inserting a meat thermometer
into the thickest part of the chicken. It should read 165°F (74°C) when fully
cooked.
- Once
the chicken is cooked, remove the baking dish from the oven and let it
rest for a few minutes.
- Serve
the spinach and feta stuffed chicken breasts alongside the roasted
asparagus. You can squeeze fresh lemon juice over the chicken for added flavor
if desired.
